Leaving from the Collegiate Church of Saint-Étienne in Capestang — an unfinished Gothic masterpiece of the 14th century perched on its promontory — the trail strikes out through the Minervois vineyards. Vine paths and garrigue tracks link the sleepy villages of Quarante and Cruzy before descending into the Argent-Double valley. The arrival at Bize-Minervois, a circulade village nestled between limestone cliffs and a tamarisk-lined river, marks a fine introduction to the GR78 through a landscape of vines, olive trees and Provençal garrigue.
