A long stage that crosses the entire Minervois from end to end, at times following the Canal du Midi before plunging into the vineyards and aromatic garrigue. The limestone plateaus offer sweeping panoramas over the Montagne Noire and the first ridges of the Corbières. The approach to Rieux-Minervois is heralded by the singular outline of its seven-sided Romanesque abbey, a jewel of Southern Romanesque art built in the 12th century by Adélaïde of Toulouse — unique in France for its heptagonal plan.
